Bread From Light Flour


  • 150 g integral spelt flour
  • 150 g soft spelt flour
  • 150 g barley flour
  • 2 tablespoons ground flax
  • 2 tablespoons rye or other bran
  • 2 tablespoons wheat germ
  • 2 tablespoons sesame
  • 1,5 teaspoon sea salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 5 dl (2,5 cups) mineral water
  • 2 tablespoons olive oil


First mix all dry ingredients. Then add wet ingredients and mix well. Leave the mixture to rest ten minutes. In the meantime grease mold for bread and sprinkle it with sesame. Pout mixture in it, align with wet hands and sprinkle with barley flour. Cover with aluminum foil and bake it one hour on 200 degrees. Then remove foil and bake more 40 minutes on 150 degrees. Leave baked bread to cool for some 2 to 3 hours, then wrap into dry cloth.
