Trout With Rosemary


  • 1 trout
  • little fresh rosemary
  • lemon
  • few black olives
  • sea salt
  • 1 tablespoon olive oil
  • zucchini
  • fresh dill
  • 1 garlic clove


The size of trout and zucchini depends on how many people will enjoy dinner. If it’s for two, take a big trout or two middle ones. Also, in this case, take two medium-sized zucchini. If you are preparing a dinner for one person, then halve that. Wash trout and grease with olive oil (as well as inside) and salt also. Then put little rosemary and lemon you previously cut into rings. Put the fish on baking tray covered with baking paper, and put more rosemary and lemon on it, as well as few olives. Put in the oven and bake about half an hour on 200 degrees. In a meantime cut zucchini and cook. Before the end of cooking add fresh dill and chopped garlic. When softened, drain from the water, transfer to blender, add salt and mix until get puree. Serve on a plate, place fish over it complete with lemon and olives. Enjoy!
