Lazy Pie With Nettle And Greens


For the dough:

  • 1 cup (3 dl) spelt flour
  • 1 cup rye flour
  • 1 tablespoon oat bran or psyllium
  • 3 eggs
  • 1 baking powder
  • sea salt per taste
  • 200 ml olive oil
  • 1 cup mineral water

For the filling:

  • 2 bunch of spring onion
  • 2 bunch of greens
  • 2 handfuls nettle
  • 250 g Feta cheese
  • 1 egg


First you should make the filling: blanch nettle, then chop it as well as spring onion and greens. Fry all on olive oil and little water. When cool a bit, add cheese and one egg and stir all well. Then make the dough: mix flours, oat bran or psyllium, salt and baking powder, then add oil and water. Knead well. Put in a baking dish baking paper, then place one half of the dough in it, stretch it with wet hands, put filling over it and cover with second half of the dough. Align and put in preheated oven. Bake about half an hour on 220 degrees. When get nice golden color remove pie from the oven. Use toothpick to check is it baked.
