Sesame Pretzels


  • 200 g spelt flour
  • 200 g barley flour
  • 1 dl olive oil
  • 2 dl dark beer
  • 100 g sesame
  • 1 tablespoon chia seeds
  • 1 – 2 teaspoons sea salt
  • 1 baking powder


Bake sesame in a frying pan. Put less than half in dry ingredients, mix and then add oil and beer. Knead elastic dough. After ten minutes of kneading it will be elastic enough to make nice pretzels. Divide the dough into three parts. Form a small roller from each part, then divide it into half, then divide that halves into half and each of them again into half. Do that if you want all your pretzels to be the same size. Roll your rollers into sesame. Then take either end of the roller in your finger tips and draw them together so the dough forms a circle. Twist the ends of the rope together once or twice, depending on your preference. Then bring the twisted end toward yourself and fold it down onto the bottom curve. Use a bit of water or egg whites to wet the ends and make them stick them onto the dough. Arrange pretzels into baking dish covered with baking paper and put in preheated oven. Bake on 200 degrees about 15 to 20 minutes.
