Vegetarian Burgers

Ingredients

  • 300 g eggplant
  • 1 cup of cooked millet
  • 1 shallot onion
  • 2 cloves of garlic
  • 1/2 cup of rice flour (or other allowed in restriction to make mixture)
  • oregano
  • pepper
  • sea salt

Preparation

Preheat the oven on 220 degrees. Arrange slices of eggplant on a baking tray covered with baking paper. Bake some 20 minutes until soften. Cook millet or use already cooked. Fry chopped shallot onion and garlic on a little olive oil, just to soften. When eggplant is little chilled put it into blender or food processor and mix until get compact mixture – pasta. Add it to the bowl with cooked millet, then add fried onion and garlic, rice flour and spices. Knead well with your hands, form burgers and fry them on medium temperature on little butter or allowed oil for frying until get nice golden color from all sides.
