Zucchini Pie With Ricotta Cheese

Ingredients

  • 250 g ricotta cheese
  • 250 g grated zucchini
  • 2 eggs
  • 1 egg yolk
  • sea salt, pepper
  • 2 tablespoons Parmesan
  • 3 – 4 cherry tomatoes
  • little fresh oregano
  • basil

Preparation

Heat the oven on 200 degrees. Mix in a bowl cheese, eggs and egg yolk. Add grated zucchini, chopped oregano and basil leaves (leave few whole leaves), salt and pepper. Decorate with cherry tomatoes, oregano and basil leaves and Parmesan (not mandatory). Pour the mixture into greased baking mold or baking dish and bake about 20 to 25 minutes until get nice golden color.
