Pisto - Traditional Spanish Dish


  • 50 ml olive oil
  • 1 small red onion
  • 1/2 leek
  • 3 garlic cloves
  • 1 teaspoon baked garlic (if you don’t have, put 4 garlic cloves)
  • 2 fresh peppers (two different color)
  • 1 small zucchini
  • 2 – 3 tomatoes
  • 100 ml white dry wine
  • sea salt, pepper, parsley


Heat the olive oil and fry finely chopped onion and leek. Then add finely chopped garlic and a teaspoon of baked garlic paste. When fried little add chopped fresh peppers and fry all on medium temperature, then add wine. Add chopped tomatoes and fry all on medium temperature stirring occasionally. When the water evaporated add salt and pepper and hot crushed peppers if you like. As in Spain beans or chickpeas are very represented, you can add cooked chickpeas in it. Just two minutes to connect the flavors and your Pista is ready. Sprinkle plenty of parsley and enjoy.
