Meatballs In Boats


  • 500 g medium size mushrooms
  • 500 g minced chicken fillet
  • 1 eggplant
  • 1/2 leek
  • 150 ml white wine
  • sea salt, pepper, paprika, garlic powder, parsley
  • 1 tablespoon olive oil


Mince chicken fillet into blender or food processor, add salt, pepper, paprika, garlic powder and knead well. Wash mushrooms, remove stems and arrange them into deep baking dish, a little apart, not close to each other. Form small balls from the meat size caps of mushrooms and stuff them. Then chop the rest of the mushroom, ie the stems, into dices, also chop the eggplant and the leek, and arrange them around the mushrooms and meatballs, mix the white wine and olive oil, sprinkle over everything and finally sprinkle with dried or fresh parsley. Cover with foil and put into pre-heated oven. Bake about 20 minutes on 250 degrees. Then uncover and bake more 20 minutes on 200 degrees.
