Fasting Muffins With Aquafaba


  • 2 dl aquafaba ( the liquid leftover from cooked chickpeas)
  • 1 cup (2dl) spelt flour
  • 1/2 cup (1dl) rye flour
  • 1/2 baking powder
  • 150 g leek
  • pinch or two sea salt
  • 1/2 cup olive oil
  • 1 dl mineral water (optionally)


Foamly whisk aquafaba. Finely chop leek and fry on olive oil and little water. Leave it to cool. Mix in a bowl flours, baking powder and salt. Then add oil, leek and at the end aquafaba. You mix it slowly, with some spatula, to remain as foamly as possible. If you think that the mixture is too thick, add little mineral water. Pour into silicone molds for muffins and bake in preheated oven until get nice golden color (about 30 minutes). Use toothpick to check is it baked.
