Dandelion And Wild Garlic Pesto


  • 1 and half bunch of wild garlic
  • 1/3 bunch of dandelion
  • 30 g blanched almonds
  • pinch of sea salt
  • 1,5 dl olive oil
  • juice of 1/2 lemon


Adjust amount of lemon per your taste. If you don’t like too much sour reduce to one quarter of lemon. Wash wild garlic and dandelion, chop with your hands and put into blender. Then add almonds, oil, salt and lemon juice. Mix well. If the mixture isn’t homogeneous enough and does not slip through the blender, add more olive oil. You can also add little young goat cheese.
