Cheese And Chive Muffins


  • 2 eggs
  • 1 tablespoon buckwheat flour
  • 1 tablespoon rye flour
  • 1 tablespoon oat flour
  • 1 tablespoon barley bran
  • chopped fresh chive
  • little less than 1 dl olive oil
  • 60 g young cheese
  • 1 full teaspoon baking powder
  • 1/2 teaspoon sea salt
  • pepita (pumpkin seeds) for sprinkling


Mix all flours in one bowl. In other bowl whisk the eggs, add oil, salt and baking powder and mix well using hand mixer. Then add mixed flours and stir using tablespoon, add crumbled cheese and chopped chive. Stir well and stuff molds for muffins and sprinkle with pepita. Put in preheated oven and bake about 15 minutes.
