Cheese Cake With Chia Seeds


For the crust:

  • 250 g ground almonds (hazelnuts, cashew)
  • 50 – 100 g ground sesame
  • 50 g butter
  • 150 g fresh dates
  • juice of half lemon

For the filling:

  • 2 dl whipping cream
  • 2 dl sour cream
  • 300 g Mascarpone cheese
  • 1 scraped vanilla bean
  • 3 tablespoons chia seeds
  • 1 – 2 tablespoons fruit filling

For the fruit filling:

  • 600 g red berries per taste
  • 3 tablespoons chia seeds
  • 1 – 2 tablespoons agave syrup (optionally)


For the crust peel dates and grind them in blender or food processor with almonds and sesame. Add melted butter and lemon juice and knead well with your hands and stretch in a round mold as for ordinary cheese cake. For the white filling whip the cream and gently add sour cream and Mascarpone cheese using spoon. Then add chia seeds. For the fruit filling cook red berries with little water with or without agave syrup. Remove from the heat, leave to cool and add chia seeds. Take one or two tablespoons of that fruit filling and add to white filling. Then arrange on the crust: first white filling, then fruit filling and leave in the fridge for few hour or overnight.
