Pork With Vegetables


  • 1/2 pepper
  • 1/3 eggplant
  • 1/2 onion
  • 5 – 6 mushrooms
  • 2 pork chops
  • little pork fat
  • 1 tablespoon butter
  • little parsley
  • 3 garlic cloves
  • spices: sea salt, pepper, oregano


Chop all vegetables. Salt eggplant and leave to release the liquid. Remove bones from pork chops, cut it into few pieces and fry them on heated pork fat. When one side get nice golden color, turn the meat on other side, cover and reduce temperature. After few minutes remove meat from the heat, put in some dish and cover. Dry eggplant. First put onion into frying pan, then add eggplant and fry a bit. Then add other vegetables and butter. Add spices and garlic chopped into leaves. When everything is soften a bit put the meat back in the pan with its juice and briefly cook all. Pour into serving plate, sprinkle with chopped parsley and enjoy.
