Chocolate Souffle


  • 2 eggs
  • 100 g chocolate with 70% cocoa
  • 50 g Stevia powder
  • 100 g soft spelt flour
  • 100 g butter
  • 1 vanilla bar
  • 200 ml whipping cream


Melt chocolate with butter. Foamy whisk the eggs with Stevia powder. When the chocolate is cool a bit add whisked eggs. Cut vanilla bar and scrape the seeds and add them to the mixture for souffle. At the end add spelt flour and mix well. Grease ceramic souffle dishes with butter, sprinkle with spelt flour and pour mixture in them. Pour little water in a baking dish, arrange ceramic dishes with souffle in it. Bake in preheated oven on 200 degrees until make a crust on a souffle. Shortly cook baked souffle and turn over on the serving plate. Decorate with whipped cream.
