Pastry With Sausages


  • 280 g spelt flour
  • 70 g barley flour
  • 120 ml water
  • 1 baking powder
  • 1/2 teaspoon sea salt
  • 1 tablespoon butter
  • 1 homemade sausage (app. 150 g)
  • 1 small egg
  • sesame for sprinkling


Mix in a bowl spelt and barley flour with little sea salt. Add melted butter and gradually add water and knead with your hand until get smooth dough. Wrap the dough into transparent foil and leave to rest 20 minutes. Then transfer the dough on a floured working surface and stretch using rolling pin into rectangular thickness 5 mm. Coat with whisked egg, place sausage on one end and tightly rolled up. Then cut the roll with a sharp knife to 5 mm thick slices. Arrange pastries in a baking dish covered with baking paper, coat with whisked egg and sprinkle with sesame. Bake in preheated oven on 200 degrees until get nice golden yellow color.
