Ginger Cookies


  • 200 g spelt flour
  • pinch of sea salt
  • 2 teaspoons ginger
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 125 g butter
  • 100 g Stevia powder
  • 1 egg


Mix in a bowl butter, Stevia powder and egg and mix well. Add spelt flour, salt, ginger, cinnamon and baking powder. Knead the smooth dough and leave to rest in the fridge for 30 minutes. Then transfer the dough on a floured working surface and stretch using rolling pin on thickness 5 mm. Using heart-shaped or other type of mold to form cookies. Arrange them in a baking dish covered with baking paper. Bake in preheated oven on 150 degrees about 10 minutes or until get nice, gently golden color.
