Chopped Pork


  • 1,2 kg pork meat from neck without bones
  • 3 tablespoons Dijon mustard
  • 1 onion
  • 4 garlic cloves
  • 1/2 teaspoon basil
  • 1/2 teaspoon oregano
  • 1 tablespoon Stevia powder
  • 1 teaspoon paprika
  • 2 dl vegetable broth
  • 200 ml tomato juice
  • sea salt, pepper
  • allowed oil


Salt the meat well. In one bowl mix grated onion and garlic, mustard, basil, oregano, oil, paprika and Stevia powder. Rub prepared marinade into meat, wrap into transparent foil and leave overnight in the fridge. Remove meat from the foil next day and put in the baking dish covered with baking paper. Pour little vegetable broth and cover with aluminium foil and bake in preheated oven on 150 degrees for six hours. Then increase the temperature on 180 degrees and continue baking for half an hour. Remove foil and bake another half an hour. Then strain dish gravy, add tomato juice, salt and pepper per taste and cook until boiling. Chop baked meat using fork into strips, pour sauce over it and serve with fresh salad.
