Turkey Pate I


  • 300 g turkey breasts
  • 1/3 leek
  • 2 cooked egg yolks
  • 2 teaspoons capers
  • juice of 1/2 lemon
  • little olive oil
  • spices: sea salt, colorful pepper, curry per taste
  • little broth


If the meat isn’t from the soup, first chop the leek and fry it a bit on little oil and water. Then add chopped turkey meat and add water to cover it. Cook them until softened. Let them cool a bit, then transfer it into blender or food processor with the liquid from cooking. Add egg yolks, capers, lemon juice, little olive oil and spices. Mix all and if necessary add more liquid to get homogeneous and smooth mixture. That’s it. You’ll have perfect pate in just ten minutes.
