Perfect Sesame Sticks


  • 90 g spelt flour
  • 90 g oat flour
  • 3/4 teaspoon baking powder
  • 1 teaspoon coarse sea salt
  • 1 tablespoon ground roasted almonds
  • 1 tablespoon ground sunflower seeds (pepita)
  • 110 ml water
  • 2 tablespoons olive oil
  • roasted sesame for sprinkling


Mix all ingredients except sesame. Add oil and water and knead medium hard dough. Transfer to the floured surface, add more flour if the dough sticks to your fingers, but it should not. Leave to rest for 15 minutes. Take as possible the same parts of the dough and form the sticks between the palms and shape little with wet hands, and then roll into sesame. Arrange sticks on a baking paper and put in preheated oven on 200 degrees. Bake for about 15 minutes, not longer. As they get cool, they will be crispy. Store them in box for few days.
