  • 1 pack of buckwheat phyllo
  • 1 large eggplant
  • 2 small zucchini
  • 4 eggs
  • 250 g cheese
  • 100 ml mineral water
  • allowed oil
  • 6 tablespoons buckwheat flour


Chop baked eggplant, add grated zucchini, turmeric, sea salt and crumbled cheese. Whisk the eggs, add mineral water, few tablespoons of oil, salt and gradually add buckwheat flour. Fill per two sheets of phyllo (sprinkled with oil) with eggplant and zucchini mixture, then over that put 3 tablespoons of cheese mixture, wrap in a roll and arrange in a round baking dish. Repeat the procedure until you spend all ingredients. The rest of the eggs put over the arranged pie and put in preheated oven on 220 degrees to bake 35 to 40 minutes.

If you’re in restriction you can consume this dish once in 14 days.
