- 1 small head of cauliflower
- 1 egg
- app. 50 g mozzarella
- 1 tablespoon olive oil
- sea salt, pepper and spices per taste
- tomato, anchovies, mozzarella or other filling per your taste
Divide head of cauliflower into small florets and grate them. Grate only florets, leave the stems for later, for some soup or puree. Pour one cup of boiling water over cauliflower and leave for ten minutes. Take the gauze or clean dishtowel, transfer cauliflower on it (do that above some bowl), and then wrap a cloth with your hands to squeeze all the water. Put that squeezed cauliflower into bowl, add whisked egg, grated mozzarella, olive oil and spices. Mix all well and that’s your pizza dough. Heat the oven on 200 degrees. Place baking paper on a baking tray, transfer the dough on it using tablespoon and stretch it in the shape of pizza. Bake for 15 minutes, remove from the oven and fill per your wish (tomato, mozzarella, anchovies…) and put back into oven for more ten minutes.
