Bread With Basil


  • 150 g rye flour
  • 150 g spelt flour
  • 200 g wheat integral flour
  • 5 g baking soda
  • 5 g coarse sea salt
  • handful of fresh basil
  • 1 tablespoon caraway
  • 1,5 cup of sour milk
  • 125 ml water


Mix flour, salt and baking soda. Finely chop basil, mix with caraway and add to mixture of dry ingredients and mix again. Mix sour milk and water into wet mixture. Make a recess in dry mixture and pour the wet mixture and stir, then knead with your hands until get compact mixture little sticky, but to pick up all flour from the bowl. Pour on floured surface and continue to knead until middle soft but completely non-sticky dough. Form a loaf and put on a baking paper and gloss over with wet hands, cut little with the knife of some centimeters and half deep and try that loaf should not be higher than three to four centimeters. Put in the oven and bake on 220 degrees about 40 minutes.
