Homemade Börek With Meat


  • 500 g buckwheat phyllo
  • 500 g minced meat (beef or pork)
  • 250 – 300 g onion
  • 3 garlic cloves
  • 3 tablespoons pork fat
  • spices: sea salt, colorful pepper


Finely chop the onion and fry on two tablespoons of pork fat gradually adding water. When become translucent add chopped garlic and meat and continue cooking. Before the end add spices. Then take hand mixer and finely chop mixture. You can do this in the evening to speed up preparation of börek in the morning. Cover and leave in the fridge. In the morning melt one half tablespoon of pork fat and mix with water. With other half grease round baking dish. Take two phyllo sheets and grease with mixture of pork fat and water and arrange. First put the first sheet, grease, put second sheet and turn it little that the ends are visible. Then take spatula and put the first layer of meat. Put another sheet, grease, put the mixture and repeat procedure until you use all meat mixture. All the time the ends of sheet should be little over the sides of baking dish. Then take that ends and put them back inside and grease once again and cover with very thin layer of meat mixture. Finally take one more sheet and place over the börek, tuck at the bottom. That’s it, your package is ready for baking. Grease once more and put in the oven. Bake about half an hour on 220 degrees. During baking process you can grease two to three times the upper part of börek. It is done when get nice golden brown color. Cut and serve with sour milk, Greek yogurt, kefir…
