Fritters With Zucchini And Gouda


  • 2 eggs
  • 2 tablespoons flour
  • pinch of sea salt
  • 1/2 teaspoon baking powder
  • 1/2 tablespoon olive oil
  • 2 teaspoons butter
  • 1/3 zucchini
  • 60 g Gouda cheese


Wash zucchini and grate it. Whisk the egg, add baking powder and salt. Then add flour (one tablespoon of rye and one tablespoon of buckwheat). Drain zucchini and add to the mixture. Heat frying pan and put butter in it and when melted take the mixture with tablespoon and place in heated butter (two tablespoons per one fritter). While frying on one side, grate Gouda. When turn fritter, put grated cheese over the surface and cover the frying pan. When the cheese is melted it’s time to eat.
