Zucchini Pesto


  • 1 green zucchini
  • handful of nuts
  • little Parmesan
  • sea salt
  • pepper
  • olive oil
  • garlic
  • lemon juice


Cut zucchini lengthwise. Don’t salt them, just arrange on a baking tray greased with olive oil with the cut side down. Bake in the oven some 15 minutes and then leave to cool. Cut into large parts and put into blender with other ingredients. Turn the blender on and that’s it. Try and add some spices if needed. If you’re in restriction phase don’t use Parmesan.
