French Pastry


  • 350 g spelt flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon mixture of dry spices
  • 50 ml olive oil
  • app. 200 ml lukewarm water


Mix in a bowl spelt flour, salt, mixture of spices, baking powder and olive oil. Pour lukewarm water and knead smooth dough. If the dough is too soft add little bit more flour and knead again. Cover with dry dishcloth and leave to rest and rise. Then divide it into four balls. Grease your palms with oil and stretch the balls to get shape of leaf. Transfer to a baking dish covered with baking paper and with the sharp knife cut in several places and little stretch that slots. Bake in preheated oven on 200 degrees about 20 minutes.
