Muffins With Cheese And Parsley


  • 1 large egg
  • 120 g hard cheese
  • 1/4 bunch of parsley
  • pinch of sea salt
  • 1/2 teaspoon baking powder
  • 2 tablespoons oat flour
  • 1/2 dl mineral water


This is a quantity for one person. If you’re doing more, just increase everything proportionally.
Grate cheese and finely chop parsley. Whisk the egg well in a bowl, then add salt and baking powder and mix again. Add oat flour and little mineral water, parsley and cheese. Stir all with spoon. Put baking paper or paper for muffins in molds and stuff them with prepared mixture. From this amount you’ll get 4 muffins. One thing is important. Everywhere around the cheese must be a mixture of flour and eggs, so that the muffins do not stick to papers when the cheese begins to melt. Put in preheated oven and bake about ten to fifteen minutes on 220 degrees.
