Bread With Egg White


  • 200 g rye flour
  • 50 g spelt flour
  • 50 g millet flour
  • 1/2 teaspoon sea salt
  • 3 teaspoons baking powder
  • 1 tablespoon olive oil
  • 2 tablespoons sunflower seeds
  • 300 ml water
  • 1 egg white


Mix in a bowl flours, sunflower seeds, oil and water. Stir with a spoon, cover and leave to ferment at least 6 hours. Then whisk the egg white in a separate bowl and add to prepared dough, and knead well using mixer with the addition for dough. Then gradually add salt and baking powder and mix, mix, mix. Then transfer the dough into baking dish covered with baking paper, cover with aluminium foil and put in preheated oven. Bake 15 to 20 minutes on 230 degrees, then lower the temperature between 200 and 210 degrees. Before the end of baking remove foil and bake little more on 200 degrees, just to get nice golden color. Wrap in a dry dishcloth and leave to cool.
