Baba Ganush With The Addition


  • 1 eggplant
  • 1 garlic clove
  • 2 or 3 tablespoon sour milk
  • pinch of sea salt
  • 1/2 teaspoon cumin
  • 2 teaspoons tahini
  • 1 tablespoon olive oil
  • parsley, crushed red pepper and chickpeas for sprinkling (not mandatory)


Prick off eggplant with fork or knife and put in the oven to bake. When it is baked remove seeds and put its meat into blender. Add garlic, tahini, sour milk, spices and little oil and mix. Transfer to a bowl, pour little oil over it and sprinkle with chickpeas, crushed red pepper and parsley.
