Golden Muffins


  • 3 eggs
  • 6 tablespoons of flour (rye and spelt)
  • pinch of sea salt
  • 1,5 teaspoon baking powder
  • 1/3 zucchini (about 60 grams)
  • 150 g cheese (Emmental or mozzarella if you’re in restriction)
  • 1 tablespoon olive oil
  • 1/2 dl mineral water


First whisk in the bowl egg whites with little salt. Then add egg yolks, one per one. Gradually add mineral water and mix. Then add baking powder and flour. At the end add grated zucchini and grated cheese. Pour into silicone mold for muffins or into classic molds covered with baking paper. Put in preheated oven and bake on 220 degrees about 20 minutes. Use toothpick to check is it baked.
