Summer Pizza

Ingredients

For the dough:

  • 100 g spelt flour
  • 50 g barley flour
  • 1 egg white
  • 50 ml lukewarm water
  • pinch of sea salt
  • 1 teaspoon baking powder

Mix in the bowl flours, salt and baking powder. Add egg white and oil, stir with the spoon and add water. Knead the dough with your hand and remove to the working surface. Knead it little more, form ball and leave to rest. In the meantime , make the most beautiful sauce in the world. Real summerly. Pesto!

For the pesto:

  • 1 bunch of basil
  • handful of almond
  • pinch of sea salt
  • 1 little or 1/2 large lemon
  • 1,5 dl olive oil
  • 1 garlic clove
  • 1 piece of Parmesan or some hard but strong cheese (if you are in non-restriction)

Preparation

Wash basil and tear apart leaves. Put into blender and mix with other ingredients until you get desired compact pasta. Add more lemon juice and olive oil if necessary. When you make a pesto transfer it to the jar. Perhaps you will remain part of it, just to use it the next day with some toasted bread.
Stretch the dough for pizza into circle using rolling pin. As thin as possible, but not to tear it. Then transfer to a baking tray covered with baking paper and try to stretch it little bit with your fingers. Briefly put the tray into preheated oven just to make crust. During that time grate Parmesan or mozzarella if you’re in restriction, cut few baby tomatoes and few black olives. Put optional on little baked pizza and put back into oven you previosly heated on 220 degrees. Pizza is baked when the cheese is melted. Remove from the oven and cover with pesto. And, that’s it. Summer pizza for summer morning.
