Mediterranean Bread


  • 100 g rye flour + little more
  • 60 g millet flour
  • 60 g barley flour
  • little baking soda
  • 2 tablespoons sesame
  • 2 tablespoons olive oil
  • 100 ml mineral water
  • 1 tablespoon oregano
  • 10 chopped green olives


Mix ingredients, first dry, then liquid and knead the dough. Remove on the working surface and knead more on it. Then form a rectangular shape and cut in half a centimeter of thickness to get small breads. Laid them on a baking paper and bake at 180 degrees for 20-25 minutes. Let them bake very well because the point is to be hard and crispy.
