Gratinated Ravioli


  • 150 g barley flour
  • 150 g spelt flour
  • 1 teaspoon sea salt
  • 2 eggs
  • little water


Knead the dough from listed ingredients. It should be solid, not too hard. Leave it to rest a bit. Then stretch the dough and cut into cubes. Put the filling per your wish and fold with other cube, press with the fork on the sides in order not to open. In a boiling water put some butter and cook ravioli in it. They are cooked when float on the surface. Remove it from the water using perforated spoon. You can prepare various filling. For example fry some chopped bacon, add chopped garlic, sour cream and little water. Not to forget spices: basil, salt, parsley…Drain ravioli and put them back on the stove on moderate temperature. Add grated mozzarella and Parmesan, handful of blanched, chopped spinach, prepared white sauce and bacon. Stir all, pour into deeper baking dish, cover with foil and bake on 180 degrees about 20 minutes. Remove foil and bake another 5 minutes. If you’re in restriction you can make sauce with onion, garlic, bacon, spinach and tomato juice. When you get thick sauce you can add mozzarella and gratinate.
