Fermented Pancakes


  • 1 cup spelt flour
  • 1 cup water
  • 1 egg white
  • pinch of sea salt
  • 1 tablespoon olive oil


In the evening mix flour and water, cover and leave overnight to ferment. In the morning whisk egg white to get light foam. Add salt to mixture, then add olive oil and at the end add whisked egg white. Grease pan for pancakes with olive oil, pour mixture with ladle in it and fry from both sides. Fill them per your wish.
