Focaccia With Red Onion


  • 150 g integral spelt flour
  • 2 tablespoon olive oil
  • pinch of sea salt
  • 1,5 teaspoon baking powder
  • 100 ml lukewarm water
  • 1/2 red onion
  • coarse sea salt for sprinkling


Mix in a bowl flour and salt. Add oil and water and knead the dough with spoon. Cover and leave overnight or at least for 10 hours. In the morning gradually add baking powder and knead the dough. It will be hard, so you’ll need a lot of strength. Remove from the bowl on a working surface and form a disc. Then put in a baking tray covered with baking paper. Grease with olive oil. Cut the red onion into rings and press little into dough. Sprinkle with coarse sea salt and also press it a bit and put in preheated oven. Bake on 210 degrees for about 15 minutes.
