Bannocks With Cracklings


  • 130 g ground cracklings
  • 200 g feta cheese
  • 1 egg white
  • 1 dl mineral water
  • 1/2 baking powder
  • spices per taste: smoked paprika and pepper
  • 200 g integral rye flour
  • 150 g integral spelt flour


Mix ground cracklings with crumbled feta cheese. Add other ingredients and knead the dough. Stretch the dough, then fold it. Turn it for 90 degrees and repeat the procedure: stretch and fold. And so for ten times. During last stretching sprinkle with black and ordinary sesame and stretch to the thickness of the finger. Make bannocks and bake on 180 degrees (on baking paper) some 20 minutes.
