• 100 g spelt flour + for working surface
  • 1 egg white
  • 1 dl lukewarm water
  • pinch of sea salt
  • 1/2 baking powder
  • 1 tablespoon olive oil


Put in a bowl flour, salt and baking powder and mix well. Then add oil, egg white and water. Knead the dough with the spoon, then remove it on floured working surface and continue to knead it to be soft but not sticky. Divide into three parts and stretch with the rolling pin into thin circle. Fry on medium temperature in a frying pan from both sides. Sprinkle little flour in a frying pan before put tortilla in it. You don’t need any fat. Combine tortillas with blue cheese or with sour cream, ham, eggs if you’re in restriction.
