Crispy Crackling Bannock


  • 100 g integral wheat flour
  • 100 g spelt flour
  • 50 g barley flour
  • pinch of sea salt
  • little baking powder
  • 2 tablespoons pork fat
  • 200 g ground cracklings
  • 200 ml lukewarm water


Mix all ingredients except cracklings and knead soft dough. Stretch the dough and coat with 1/3 of ground cracklings. Switch the dough as you fold a box and leave to rest for ten minutes. Repeat the procedure three times. When finish stretch the dough in half centimeter of thickness, cut into cubes, switch each in half, gently squeeze the ends to stick them up and put on baking paper. Bake 20 to 25 minutes on 200 degrees.
