Small Protein Bread


  • 3 egg whites
  • 10 tablespoons rye flour
  • 1 tablespoon olive oil
  • pinch of sea salt
  • 1 teaspoon baking powder
  • app. 1 dl mineral water (depending on the flour)
  • few drops of lemon juice
  • 1 tablespoon ground flax


Beat the egg whites with almost to get a foam. Gradually add salt, baking powder and lemon juice into egg whites. Then gradually add flour. When the rye flour “drank” the egg whites, slowly add mineral water to slightly dilute the mixture. Take small round baking dish and grease with pork fat and sprinkle with flour. Pour mixture in it and put in preheated oven. Bake about 15 minutes on 210 degrees. Use toothpick to check is it baked.

With this bread you can eat whatever you want, but you do not have to overdo it with proteins because the protein is already inside (egg whites). We didn’t use the whole eggs, so you can combine with dairy products.
