Simple Cake


  • 4 dl aquafaba (water in which you cooked chickpeas)
  • 300 gr of fruit residue from the juice extraction (if you do not have, then grate apples, pears, orange without a lot of juice, lemon, ginger, and mix all nicely in the blender)
  • 100 g ground almonds
  • 50 gr of ground seeds of plum (if you do have use almond instead)
  • 1 tablespoon chia seeds (or two if you use fresh fruits)
  • 2 – 3 fresh dates
  • 3 tablespoons coconut oil
  • 3 tablespoons agave syrup
  • spices per taste, cinnamon for example


Mix coconut oil and agave syrup. Add finely ground almonds and fruits and chia seeds at the end. Mix all with foamy whisked aquafaba. Leave to rest for ten minutes. Pour into baking tray (diameter 28 cm) covered with baking paper greased with coconut oil and sprinkled with ground seeds of plum (or ground almonds). Bake in preheated oven on 180 degrees for about half an hour. Use toothpick to check is it baked.
