Focaccia With Olives And Sunflower


  • 150 – 160 g spelt flour
  • 150 ml water
  • 2 – 3 tablespoons olive oil
  • pinch of sea salt
  • 2 teaspoons baking powder
  • 5 olives
  • 1 sprig of rosemary
  • little sunflower seeds


Mix flour and water in the evening, cover and leave to rest on room temperature. In the morning add oil, salt and baking powder and knead the dough. Put the dough on the floured working surface, but just a little because the dough should remain soft and greasy. With your hands form the disk directly on a baking paper you put on a baking tray. Make thin focaccia. Cut olives into halves and press them into focaccia, as well as rosemary needles. Sprinkle with sunflower seeds and olive oil and put in preheated oven on 210 degrees and bake for ten minutes.
