Muffins With Ham And Zucchini


  • 3 eggs
  • 150 g oat flour
  • 80 ml mineral water
  • 1/2 small zucchini
  • 80 g ham
  • pinch or two of sea salt
  • 2 tablespoon olive oil
  • 1,5 teaspoon baking powder


Grate zucchini and drain off excess water. Cut the ham into cubes or stripes. Whisk the eggs foamy, then add salt, baking powder and olive oil. Then gradually add flour and at the end mineral water. Then add zucchini and ham and gently stir. Pour into silicone mold for muffins and put in preheated oven. Bake on 220 degrees about 20 minutes.
