Lemon Kugelhopf

Ingredients

  • 3 eggs
  • Stevia powder per taste
  • 75 ml allowed oil for frying + little for greasing
  • 75 ml water
  • vanilla stick
  • 170 g spelt flour + little for sprinkling
  • 1 small lemon
  • 1/2 baking powder
  • pinch of sea salt

Preparation

Whisk egg yolks with Stevia powder and then gradually add mixture of water and oil constantly mixing. In other bowl mix flour and baking powder and add to egg yolk mixture. Cut longitudinally vanilla stick and scrape seeds and add to mixture. Then add lemon juice and lemon zest. Separately beat the egg whites into foam and add to mixture with egg yolks. Gently stir to get compact mixture. Grease small mold for kugelhopf with oil and sprinkle with flour and pour mixture in it. Bake in preheated oven on 180 degrees about 35 minutes, depending on the oven. Turn over baked kugelhopf from the mold and sprinkle with Stevia powder.
