Kebabs With Eggplant


  • 500 g minced veal
  • 1 onion
  • 2 young eggplants
  • 1 small red pepper
  • 1 sprig of rosemary
  • 2 garlic cloves
  • 1 egg white
  • 1/2 teaspoon paprika
  • pepper
  • sea salt
  • allowed oil


Peel onion and red pepper and finely chop, as well as rosemary needles, and mash garlic. Mix in a bowl minced veal, egg white, paprika, chopped onion and pepper and mashed garlic. Add spices and knead well. With oiled hands form balls. Wash eggplant with skin and cut into circles of thickness 5 mm. Salt and leave them to let the juice. Arrange on skewers alternately meat balls and circles of eggplant. Fry on allowed oil until get nice golden color from all sides.
