Easy Chicken Stuffed Zucchini


  • 3 medium zucchini
  • 1 leek
  • 300 g chicken breasts
  • 2 egg whites
  • 1 tablespoon chopped fresh dill or dried dill
  • allowed oil for frying
  • sea salt


Wash zucchini with the skin and cut longitudinally into halves. Scoop out the pulp and cut it into small pieces. Grease halves of zucchini with olive oil, arrange them into baking dish covered with baking paper and half a bake in preheated oven on 180 degrees. Then stuff them with prepared filling. Cut the leek into cubes and fry on a little oil. Add pulp and briefly fry together. Cut the chicken into cubes and add to vegetable, salt and continue frying until ingredients soften. Leave to cool a bit, then add egg whites and stir. Stuff half-baked zucchini halves with prepared filling and finish baking process in the oven. They’re baked when get nice golden color on the surface.
