Seasoned Focaccia


  • 200 g spelt flour
  • 120 ml lukewarm water
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Mediterranean mix: sea salt, garlic, tomatoes, chili, rosemary, thyme, basil, tarragon
  • pinch or two of sea salt
  • 1 tablespoon sour cream
  • 1/2 baking powder
  • 3 tablespoons olive oil
  • coarse sea salt for sprinkling


Mix flour and water and leave overnight to ferment on the room temperature. Of course if you have enough time. Or you can do it fast. Then mix flour, spices, salt and baking powder. Add oil and water and mix using tablespoon. Transfer mixture to the floured working surface and knead with your hands. Then stretch the dough with rolling pin. Cover with sour cream and sprinkle with coarse sea salt and little Mediterranean mix. Put on a baking paper you already put in the baking tray. Bake about 15 minutes on 200 degrees until get nice golden color.
