Eggplant And Feta Cheese Fritters


  • 3 egg whites
  • 3 tablespoons flour
  • 160 g Feta cheese
  • 120 g eggplants
  • 1/2 teaspoons oregano
  • butter


Peel eggplant and grate it. Salt it and leave it to release water. Whisk egg whites into foam and add oregano at the end. Slowly add flour in it constantly stirirng. Then add eggplant (not overly drained). At the end add crumbled Feta cheese and gently stir all. Heat the frying pan, add butter and using tablespoon put the mixture and little align it on the top. Fry on a lower temperature that the butter would not burn. When it starts to darken, between two pouring, wipe the pan with paper napkin and add a little new butter. Briefly fry on both sides.
