Cake With Apples, Walnuts And Saffron


  • 3 tablespoons chia seeds
  • 300 ml water
  • 100 ml almond butter
  • 2 tablespoons agave syrup
  • 1 tablespoons coconut sugar
  • 100 g ground walnuts + 25 g for sprinkling
  • 5 g saffron powder
  • 3 medium apples sweet/sour
  • 1/2 lemon


Soak chia seeds in water and leave on the side. Peel apples, remove seeds and stems and cut each into 16 pieces and sprinkle with lemon juice. Mix almond butter, agave syrup and saffron into smooth mixture. Then add ground walnuts and mix all. When chia seeds swallow chop them well using stick mixer/blender and add into mixture of butter and walnuts. Then whisk until you get nice compact mixture – smooth and yellow. Pour mixture on baking paper you put in baking dish diameter of 26 cm, or some cube-shaped 15 × 30, or similar dimensions, so that the dough is 1 cm thick. Arrange apples over it, sprinkle with walnuts and coconut sugar. Put in preheated oven on 200 degrees for 30 minutes. Then turn the oven off and leave cake in it until cool.
