Hot - Chicken Fillet In Salsa

Ingredients

  • 250 g chicken fillet
  • 4 tomatoes
  • 10 – 20 pine nuts
  • handful of fresh parsley
  • 1 chili pepper
  • olive oil
  • spices: sea salt, pepper, curry, crushed red pepper…

Preparation

First you have to marinade chicken in a olive oil, salt, pepper and chopped fresh parsley and leave for an hour. Then prepare hot salsa: put in a blender peeled tomatoes, chili pepper, teaspoon of olive oil, little salt, pepper and teaspoon of curry and crushed red pepper. Mix all, but not to much. It’s ok if we can see pieces of tomatoes and peppers. Pour into baking dish (if you have some narrower and deeper). Briefly fry fillet in a frying pan from both sides and put in a dish with salsa so that the whole is immersed and that only the upper side is visible, and put in preheated oven on 180 degrees and bake for 30 minutes. Occasionally open the oven and overflow the upper part of the fillet with salsa. When is baked add pine nuts you previously briefly fried on a dry frying pan.

In restriction period it’s not allowed to consume pine nuts. Instead you can use almonds or hazelnuts or to prepare salsa without any nuts.
