Smoked Eggplant And Tahini Salad


  • 2 medium eggplants
  • 1 – 2 tablespoon tahini
  • pinch of chopped garlic
  • fresh thyme
  • sea salt


Roast eggplant in a perforated pan on a gas stove. So it gets that wonderful smell and taste of smoked. If you do not have the ability to grill, then put in the oven until it softens. In that case cut egg plant into halves, put some garlic and the thyme in the middle and wrap in aluminium foil. When roasted, leave to cool a bit and take out the pulp. Chop the pulp, add tahini, mix well, add salt, chopped garlic and thyme.
